Let's talk about one of the most popular activities in Singapore--going out to eat! Have you ever thought about how you choose items off of a menu? Are you choosing the items that you want to try or is the menu designed in such a way that cause you to order those items? Chances are that it's a combination of the two, but the menu design plays a much larger role than what you might think. After a short presentation by Prof. Kimes, I can assure you that you'll never look at a menu in the same way again!

Prof. Sheryl E. Kimes is a professor of operations management at the School of Hotel Administration. From 2005–2006, she served as interim dean of the School and from 2001-2005, she served as the school’s director of graduate studies. Kimes teaches restaurant revenue management, yield management and food and beverage management. She has been named the school’s graduate teacher of the year three times.
